|Carrot, Cumin & Coriander Salad|
1 tbsp olive oil
1 tbsp lemon juice
1/2 tsp cumin
1 tsp coriander
- Peel the carrots & chop off the ends, then using either a grated or vegetable peeler, grate the carrots.
- Add the oil, lemon juice, cumin and coriander to the bowl of the grated carrot and mix together well.
- Serve immediately as an alternative salad side dish to a meal.
