Decadent Chocolate & Banana Tart



Ingredients:


Base:
225g ginger nut biscuits, crushed
125g butter, melted

Filling:
4 bananas
150g dark chocolate
280ml double cream
50g butter
2 large tbsps nutella



Method:


Base:

  1. Crush biscuits finely. I used my pestle & mortar, which worked really well.
  2. Melt the butter on a low heat.
  3. Add the butter to the ginger biscuits and mix well.
  4. Spoon into a loose bottomed cake tin & press into the base & sides to create a tart base.
  5. Leave to cool in the fridge for 30 mins.

Filling:
  1. Heat double cream til gently simmering, remove from the heat.
  2. Add the chocolate & butter to the cream, stirring continuously until melted & smooth.
  3. Whisk in the nutella until smooth.
  4. Pour into the cooled biscuit & refrigerate for a minimum of 30 mins.
  5. Before serving slice the bananas & gently press into the surface.

Optional: sprinkle the top with some icing sugar or top with whipped cream.

Serve as a dessert by itself or with some cream or ice cream.

Chocolate Banoffee Pie

Kiwi & Apple Smoothie




I love the colour of this smoothie, it looks sooo green and full of vitamins :)



Ingredients:

4 kiwis
1 banana
splash of apple juice
1 tbsp honey


Method:

  1. Chop the banana & kiwis into small pieces.
  2. Put the chopped fruit, apple juice & honey into the blender.
  3. Blend and serve as a nice refreshing drink.

Seen as it's Valentine's Day I have posted a recipe which you could make a special treat for all your loved ones in your life.

Banana Cake

A great recipe for all those black bananas that have been in your fruit bowl for a little while

Banana Cake

Ingredients:

125g butter
150g caster sugar
1 tsp vanilla extract
1 egg
2 ripe bananas (the blacker the better!)
190g self raising flour
60ml milk

Method:

  1. Preheat oven to Gas Mark 3 or 150C.
  2. Melt butter, sugar and vanilla extract in a pan over a medium heat.
  3. Mash the bananas and add the melted ingredients, stirring together.
  4. Beat an egg and add to the mix.
  5. Stir in the flour and the milk.
  6. Pour into a cake tin and sprinkle demerara sugar on top.
  7. Bake for 35 mins or until a skewer comes out clean.

Christmas Cranberry Detox Smoothie





Eaten too much over Christmas? Well now is a perfect time to start a healthy plan for the New Year and this smoothie recipe is a great one to get you off to a great start without losing the Christmas spirit already!

Ingredients:

2 cups of fresh cranberries
2 bananas
4 tbsp honey
1 cup of orange juice






Method:

  1. Put all the ingredients together into a blender and BLEND!

There you have your finished Christmas Cranberry Detox Smoothie.
