Colourful Couscous

Colourful Couscous

    Ingredients:

    A red pepper
    A small courgette
100g green beans (frozen or fresh)
    100g sweetcorn (tinned or frozen)
    200g couscous
    4 tbsp sultanas
    1-2 tbsp olive oil
    500ml boiling water
    8 tbsp fresh orange juice

Method:

  1. Chop the pepper and courgette and slice the green beans finely.
  2. Steam the pepper, courgette, green beans and sweetcorn for 5 minutes.
  3. Place the couscous and sultanas in a bowl, pour over the boiling water and leave for 5 minutes for the couscous to absorb the water.
  4. Add the orange juice and steamed vegetables to the couscous and mix whilst fluffing up the couscous with a fork.

Serve as a dish on a buffet or as a lovely healthy lunchtime meal.

Sunset at Otley Chevin

A few weeks ago, my husband and I had a romantic date at Otley Chevin with the sunset. We chose a great evening and saw an amazing sunset...

Yacht Cake

We were asked to make a birthday cake for a friend's 30th birthday a few weeks ago.

He likes sailing so we decided to make a yacht cake...

I was quite impressed with the final piece :)

Old Adventures in . . . Mercado Central, Fortaleza

Mercado Central is the Central Market in Fortaleza, a city in north-eastern Brasil. I spent 6 months in this city during 2004 and 2005 as part of my gap year. I loved coming to this place which sold handmade products and brought many nice Brasilian things home with me, as souvenirs.

It was so colourful and there were always so many people about that it had a great atmosphere and was just a great place to come and "hang out". The architecture was very interesting.
